Baked Potato Soup

Ingredients:

2/3 cup butter
2/3 cup flour
7 cups milk
4 large baking potatoes, baked, cooled, peeled and cubed, about 4 cups
4 green onions, thinly sliced
10 to 12 strips bacon, cooked, drained, and crumbled
1 1/4 cups shredded mild cheddar cheese
1 cup (8 ounces) sour cream
3/4 teaspoon salt
1/2 teaspoon pepper

Preparation:
In a large Dutch oven or stockpot over low heat, melt butter. Stir in flour; stir until smooth and bubbly. Gradually add milk, stirring constantly, until sauce has thickened. Add potatoes and onions. Continue to cook, stirring constantly, until soup begins to bubble. Reduce heat; simmer gently for 10 minutes. Add remaining ingredients; stir until cheese is melted. Serve baked potato soup immediately.

This baked potato soup recipe serves 6 to 8.

Unless someone can tell me why baked potatoes would make this better I will probably cut up raw ones unless I have leftover baked potatoes to use up or am planning ahead and heating the oven for something else anyway.
 
Having never made the aforementioned recipe (yet), I can only surmise that it's a matter of taste and and consistency. Baked Potatoes taste and feel different than boiled or other methods of preparing them.

NH - you need to use cooked potatoes either baked or boiled. The potato will take too long to cook and since it is milk based soup the milk will burn the bottom of the pan. Also you want the potato to somewhat dissolve that gives the soup its texture.

Gotcha...Thanks! I will take that under advisement. I am going to try this out and compare with what I have been making. It might be worth throwing in a few potatoes in when I fire up the stove for something else. Actually its a darn good idea because I wont have to worry about using up potatoes before they sprout. :)
 
After you make baked potato soup, it's hard to go back to regular. They have completely different tastes.
